The LDEI Charleston chapter is pleased to present a new and exciting culinary education event! The Les Dames Culinary Academy is a one-day event focused on providing culinary and hospitality education to the public.
The focus of the 2017 academy will be Holiday Entertaining. Join us in the Culinary Institute of Charleston’s downtown Palmer Campus auditorium (with free parking!) for a full-day of programming geared toward making your holiday entertaining easy, stress-free, AND fun! Learn from our Dames, all experts in their industry here in Charleston.
How to Pull off a Holiday Dinner without Stress with Nathalie Dupree, award-winning television personality and author – Guests can learn about stress-free holiday cooking and entertaining, have a few laughs and garner some practical tips for dealing with guests.
- Recipe and Taste: Pecan Tassies
How To: Holiday Baking with Kelly Wilson and Andrea Upchurch – Two of Charleston’s most celebrated pastry chefs will offer tips and recipes that will delight friends and family throughout the holiday season.
- Recipe and Taste: Spiced Pumpkin Cheesecake, Gingerbread Cake with Maple Brown Sugar Cream Cheese Frosting, Sweet and Savory Cornmeal Galette Dough, Apple, Pear, Cranberry Galette, Thanksgiving Hand Pies
Gifts from the Kitchen with Danielle Wecksler, culinary instructor/stylist and social media expert from Plateful Solutions – Hosts seeking delicious and thoughtful gift ideas should look no further than their kitchen. This session offers gift ideas with instruction, tips for packaging and a special takeaway treat that is Pinterest worthy.
- Recipe and Taste: DIY Bloody Mary, DIY Biscuit Mix, and Callie’s Biscuits
Setting the Table with Paige Crone, founder of Charleston Protocol Y’all; Tanya Gurrieri, owner of Salthouse Catering; and Emma Lesesne-Booth, senior catering and event manager for Duvall Events – Charlestonians are world-renowned for their hospitality and “Joie de Vivre.” When celebration is in order with family and friends, it’s time to pull out all the stops and break out the family heirlooms. During this session, guests will learn exciting entertaining tips for the holidays and be inspired to break out their “good stuff” to create beautiful tablescapes.

How: To Get the Party Started with Charleston Grill Executive Chef Michelle Weaver, Magnolias Executive Chef Kelly Franz and Butcher & Bee Chef Chelsey Conrad – This session focuses on “Getting the Party started,” whether it’s a cocktail social or prelude to a dinner party. Guests can learn how to create the WOW factor without making themselves nuts. They can also learn confidence-booster skills and techniques for maximum results.
- Recipe and Taste: Smoked Trout with Cornmeal Blinis and Caviar, Mushroom Meatballs with Bourbon Aioli, Pickled Deviled Eggs
Holiday Drinks and Wines with Sarah O’Kelly, wine director for Edmund’s Oast and General Manager for new beer and wine store, Edmund’s Oast Exchange and Jennifer Kulick, owner of the Tattooed Moose – The day will culminate with a festive cocktail party, featuring premium wines and holiday-themed cocktails – Charleston-style.
